Chocolate and Prune Cakes

Makes 4 small cakes (great for parties!)

3 fluid oz of sweet sherry

12 Prunes

3 eggs separated

2 heaped table spoons of fromge frais

cocoa powder (unsweetened if you have it)

1 tablespoon artificial sweetner + 1 teaspoonful for filling

1 teaspoonful Chocolate extract

Mix the egg yokes with 1 tablespoonful of artificial sweetner. Then mix in 1/2 oz (15g) of cocoa powder.

Whisk the egg whites, until soft peaks form. Mix in one tablespoonful of the egg white into the eg yoke mix. Then fold in the rest of the egg whites.

place the mixture into 4 lightly oiled ramikins (or a buttered muffin tin)

Place in a preheated oven 180 or gas mark 4. Bake for 12mins.

When you take them out of the oven they will sink - they are very moist!

For the filling;

reserve 4 prunes, drain and chop the rest, mix the chopped prunes with 2 tablespoonfuls of fromage frais 1 teaspoon artificial sweetner, 1 teaspoonful of chocolate extract.

Slice the cakes in half and place a spoonful of the mixture in the middle, place the top on and place a whole prune on the top. Dust with cocoa powder if desired.
