Bread Pudding

Makes 12

350g Bread

100g Brown Sugar

75g Butter / Margarine, melted

1 or 2 eggs (1 large or 2 small)

200g Dried Fruit

Grated Lemon Rind

Nutmeg (and any other spices you like I like adding cinnamon as well)

Soak the bread for approximately 15 mins, in cold water. Drain the bread off ( a tip for this is to use a colander and squeeze the bread). Mix in all the other ingredients. Place the mixture in a buttered and floured shallow square cake tin nd bake in a preheated oven for 1 - 1.5 hours or until firm. Cool on a wire rack and cut into 12.

You can add a table spoonful of marmalade for an extra citrus kick.
