Apple Cake

225g Self Raising Flour

1 tea spoon salt

100g Butter / Margarine

450g apples, peeled cored and chopped

75g caster sugar

2 eggs beaten

25g soft brown sugar

Sift the flour and sugar into a mixing bowl, cut the butter/ margarine into small piece and rub into the flour until the consistency of bread crumbs. Mix in the apples, caster sugar and eggs with a spoon.

Tur into a greased 8-9 inch cake tin, level the top and sprinkle with the brown sugar.

Bke in a preheated oven 180 30-40 mins until a skewer inserted comes out clean.

Allow to shrink slightly before turning out.
